Oh boy, do I have a treat for you. This recipe is sure to cure that sweet tooth you have. It’s creamy, delicious Chocolate Peanut Butter Fudge. Vegetarian friendly, and so easy to create. The combo of PB and chocolate is one that everyone loves. With the addition of the honey,  this recipe is a crowd-pleaser, or you can keep these all for yourself.

Wait! Honey is in this fudge?

I can’t forget how amazing the honey addition in this Chocolate Peanut Butter Fudge recipe is. It adds sweetness, and a uniqueness to the chocolate and PB combination. For this recipe, I used BeeMaid’s Creamed Honey. BeeMaid’s is my fav honey to use in recipes. Why? Because it’s Canadian (like me), and it’s a great alternative to refined sugar. I know it’s not vegan, but if you haven’t been following me for long, then you should know I sometimes cheat and don’t always eat fully plant-based.

Honey also is loaded with antioxidants, and it’s so versatile. You can use it in so many recipes in replacement of sugar, and this honey is made by Canadian beekeepers. BeeMaid is owned by a cooperative of over 300 of them in Western Canada.

How do you make Peanut Butter Chocolate Fudge?

A lot of people think fudge is really complicated to make. However, this recipe is quite simple. It’ll only take you 20 minutes to prep, and then you’ll let them sit for 2 hours in your freezer to get the right consistency. Here’s how you make this vegetarian fudge:

  1. Line a 8×8 baking tin with parchment paper
  2. To a food processor, add the dates and blitz till the mix sticks together and the processor will no longer blend (you almost want a ball to form)
  3. Remove the lid and add the coconut oil, honey, PB, cacao and walnuts. Pulse until smooth
  4. Dollop the mix into the pan, and pat down with your hands until it’s nice and flat
  5. Push down the Halloween candy of your choice to make it look nice and cute 
  6. Finish with a sprinkle of sea salt
  7. Put it in the freezer

It’s really that easy. You’ll have cute, festive fudge in no time for your family!

How do you make fudge healthier? 

If you looked at the ingredients for this recipe, you’ll notice that there are some healthier or different alternatives I’ve used to really sugary/unhealthy ingredients that you’d usually find in fudge. For example, I’ve used dates as a binding, and sweetener here. Dates are very nutritious and high in fiber. I’ve also used cacao versus your typical cocoa powder. Cocoa powder usually contains sugar and dairy, where cacao is a healthier alternative and usually vegan. A few easy swaps to eliminate some of those unhealthy processed sugars.

Peanut Butter Chocolate Honey Fudge Bars

This Chocolate Peanut Butter Fudge is so sweet, and so delicious. The perfect combo of chocolate and PB that everyone loves.

Ingredients
  

  • 1 cup of pitted dates soaked for 20 minutes in warm water if they are not tender
  • 1/4 cup organic coconut oil melted
  • 1/4 cup Bee Maid Honey
  • 1/2 cup smooth organic peanut butter nut-free option would be Sun Butter
  • 1 1/2 cups of cacao powder
  • 1/4 cup crushed walnuts - optional if doing nut-free
  • 1/2 tsp large flake sea salt
  • 1/2 cup of your favorite Halloween candy - Scaries etc. - use a nut-free option if doing nut-free

Instructions
 

  • Line an 8x8 baking tin with parchment.
  • To a large food processor add the dates, and blitz till the mixture sticks together and the food processor will no longer "blend". You almost want a ball to form.
  • Remove the lid from the food processor and add the coconut oil, honey, peanut butter, cacao and walnuts. Pulse the mixture till smooth should take around 20-30 seconds.
  • Now dollop the mixture into the pan, and pat down with your hands till flat.
  • Push down the Halloween candy of choice!  Just make it look cute and pretty! Finish this with a sprinkle of flaky sea salt.
  • Place in the freezer for at least two hours, and cut into squares and serve!

Notes

If you have a peanut allergy in your room, simply use Sun Butter and use allergy-friendly/treats to top the fudge with!
