Plant-Based Jackfruit Gyros

As you know, I’m Greek and very proud of my Greek roots. I love anything wrapped between pita with a dollop of tzatziki. This jackfruit gyros recipe is one of my fav Greek recipes that is perfectly suitable for a vegan or plant based diet, but will also impress the meat eaters in your house too.

Vegan Greek Lemon Rice Soup

My favourite Greek soup has turned vegan and it’s one of my favs. This Greek Lemon Rice Soup is super creamy, authentic, easy, and can be whipped up in one pot. I promise, you’ll love this one. Andrew loves the traditional non-vegan version of this soup, so I’ll make it for him on occasion when we have eggs.

An amazing vegan meatsauce that almost tastes just like the real thing. Easy to make and will be one of your go-to vegan meals.

Vegan Spaghetti (“Meat” Sauce)

This recipe can be made in one pot, there’s no meat, and it’s using real ingredients that are accessible to everyone, and any dietary requirement you have in your household or at your next dinner party. This meal is as comforting as a homemade dinner by your grandma. A staple recipe that you’ll want to make again, and again.

This recipe was inspired by two other recipes you may have seen on my blog before, my One Pot Coconut Curry Noodle Bowl and my Vegan Greek Meatballs with Whipped Feta and Creamy Orzo. I’ve combined the yummy flavours of curry soup with the hardiness of meatballs for this soup with Coconut Curry Meatballs. And boy is it a match made in heaven!

As you know, Greek food is my favorite food. I grew up in a Greek family, and my Mom would whip up some of the best Greek dishes. You’ve seen me make vegan variations of the classics, but I also like to add some Greek pizzazz into other recipes too, like this Vegan One Pot Pasta.

This vegan pot pie recipe is perfect for the colder months, and I know I’ve said that with every pot pie I’ve made, but this one has a really intense sense of comfort and wholesomeness. It seriously tastes like real beef pie. The textures are obviously a bit off because it’s beef-less but the wild rice brings so much character to the dish, not to mention nuttiness, texture, and a great source of fiber.

In case you need me to state the obvious, there isn’t actually any chicken in this easy vegan butter chicken recipe. Surprise! I’m still vegan ;)! Instead, I’ve used chickpeas and potatoes to really make this Indian curry fill you up and make it a hardy dish for fall and winter.

As always, I’ve taken this trendy dish and put my FoodByMaria vegan stamp on it and let me tell you it’s absolutely fabulous.

One Pot Coconut Curry Noodle Bowl

With this super easy one pot Coconut Curry Soup I did my best to capture just a sliver of the authentic bowls I had on my travels in Thailand. All I have to do is close my eyes while I eat this in the dead of winter and I am instantly transported back to hot days and tropical beaches.
