Good morning lovelies!!! Here I have for you is yet another desirable, and healthy pizza recipe.  Sorry again for only having one picture of it, but if I am honest I did not have much time these days to take many pictures.  Having two jobs, a blog, going gym everyday, charity work, and more on the go has proven to be quite testing, but it is nothing I cannot juggle – but this is why you only get to feast on one photo (for now, anyway).

It is actually quite funny, when I made this pizza I was like “nah, there is no way you’re going to eat this all in one go, Maria.  It is huge.” Buuutttttt then I did, and then I was like “uh oh”.  It was not a sigh of regret or shame but more like holy crap, how did I just do that, and I still feel like a ninja?!?!

Ironically, as the days go on I begin to eat more and more.  Like a lot.  I probably eat 8 medium sized meals a day.  Unless I am super hungry ill have 6 medium and 2 large.  I kid you not though.  Eating well, whole and nutritious foods has done nothing but pretty amazing things for my mind, body and spirit.  I have built a pretty well oiled machine (my body), and regardless of some speed bumps my body and I have encountered over the past 3 months it continues to work in my favour.

This is why I believe great food alternatives such as this Pizza are so awesome!! It is a pizza, but it is so good for you.  I know, I know there is no cheese, meat, or tomato sauce, but where is the fun in being traditional? Give this one a go, I promise you it will not disappoint.  The crunchiness of the crust, the richness of the pesto, the tang of the parm cheese, and the creaminess of the avocados are perfectly paired, and so indulgent but in the best way possible!

This pizza would actually be perfect with a side of hot sauce! and for those of you who enjoy a good brew beer would be great too – i think anyway 😉

Cauliflower Crust Pizza with Pesto

A vegan, delicious substitue to pizza! Super easy, super nutritious, and you don’t have to wait for take out!

Ingredients

  • 5 cups chopped cauliflower (about 1 medium head)
  • 2 chia eggs (2 tbsp chia, 5 tbsp warm water), or 1/2 cup egg whites
  • 3 tbsp. grated vegan parmesan cheese
  • 1/4 cup parsely
  • 1/2 tsp. black pepper
  • 1/2 tsp. salt
  • Topping
  • 1/2 cup pesto
  • 1 avocado
  • rocket
  • sesame seeds
  • nutritional yeast
  • pine nuts
  • finely chopped red beets (raw)
  • radishes
  • – use as much or as little of these topping ingredients as you like! experiment, and use what you know you like!

Instructions

  1. Preheat oven to 400 degrees.
  2. Line a baking sheet with parchment paper.
  3. Steam cauliflower (chopped), for 10 minutes.
  4. Once steamed, set aside, and cool.
  5. Make your chia eggs, combine both ingredients, and let it sit for 5 minutes.
  6. Now add cauliflower to a food processor, and pulse, in batches if needed till you reach a course,
  7. “wet” bread crumb like consistency.
  8. Now add the cauliflower to a large bowl, and add the remaining crust ingredients. Mix thoroughly.
  9. Now transfer the mixture onto the parchment paper and begin to form a crush using your hards. The crust should be about 1/4inch thick, but do what you like!!
  10. Bake until brown and golden should be about 35 minutes.
