My Berry Best Vegan Popsicles

Good morning Gorgeous People! I hope you all slept well, and are all ready to take on your day! I am currently eating my hot porridge with creamy coconut milk, and coconut nectar.  I love adding mashed banana, and frozen blueberries to amp up the breakfast vibes situation, and to help keep me fuller longer.  Although lately, no matter what I do I am always eating, and hungry… so I am not really sure what to do at this point, ha.

Recently I have been listening to the new Justin Timberlake song – Can’t Stop The Feeling – and it is the perfect summer song to introduce all of you to My Berry Best Popsicles.

These popsicles are:

  • refreshing
  • super healthy
  • easy to make
  • require one blender
  • and 6 popsicle moulds

They are also:

  • sugar free
  • dairy free
  • vegan
  • low glycemic
  • packed with antioxidants
  • boosted with vitamins from fresh fruit

The best thing about these Popsicles is that if you do not like popsicles you can still enjoy them! Just pop the recipe into muffin moulds, freeze, and add to your smoothies in the morning!

Adding these pops to morning smoothies will:

  • save you time
  • ensure you are eating your best
  • provide you with a healthy source of long lasting energy
  • aid in boosting your metabolism
  • and help stabilize your blood sugar levels

These Pops are sure to please the family, and are easily made!! I have provided you all with three recipes, as I used all three to create a pretty rainbow effect in the pops but you do not have to do this! Just simply add one or two to the pops, and are are set.  If you have left over mix then just enjoy it in your smoothie or add to muffin trays for extra frozen smoothie pops!

Be creative, do not be shy, and never stop learning about food!  The possibilities are truly endless, so give it a go.

PS. “Cook Time” is just how long they need to set in the freezer before eating or licking, ha!

My Berry Best Lollipops

Ingredients

  • Dark Blue/Red Layer:
  • 1 cup blueberries
  • 2 tbsp coconut milk
  • 1 tsp coconut nectar
  • 1 cup of ice cubes
  • Red/Pink Layer
  • 1 cup strawberries, hulled and sliced
  • 1 cup raspberries
  • 1/4 cup fresh lemon juice
  • 1 cup of ice cubes
  • 2 tbsp coconut milk
  • 1 tsp coconut nectar
  • White/Yellow Layer
  • 1 banana, frozen and chopped (prep these when your bananas get to ripe – simple chop them up, add to ziplock bag, and toss in the freezer!)
  • 1 cup of ice cubes
  • dash of vanilla
  • 2 tbsp chia seeds
  • 1 tsp coconut nectar
  • 1/2 cup of coconut cream

Instructions

  1. Add each layer of mixture to the blender separately, blend till smooth, and add to the popsicles moulds.
  2. To quickly clean your blender just add warm water and blend.
  3. Whilst cleaning your blender, add the moulds to the freeze to set (if you’re going for the rainbow effect).
  4. Repeat the steps above, remove moulds from freezer, and add next layer to mould (this is optional).
  5. The simplest way to do this is just to choose a recipe, make it then go from there for your next trial run.
  6. Freeze the Popsicles for up to two hours, and enjoy immediately!
  7. These puppies should last up to a week in the freezer, but they won’t be around that long I assure you!
