Good morning everyone! I hope we all enjoyed our weekend, and are getting right back into the groove of our weekly duties, and work hours!

I have for you today a really simple, delicious, and nourishing vegetable bowl.



It is perfect for meal prep, when on the go, or just when you really couldnt be asked to cook away in the kitchen.  It is vegan, and truly the perfect example, to me anyway, of a meatless monday inspiration.

Packed full with vitmains and minerals this bad boy is certain to kick start your afternoon, and keep you fuelled to snack 2 (or 3 if you’re me).


Sorry I can’t stay and talk more about this recipe but I am going to be posting a few more so I will eventually run out of things to say – weird for me to say.

  • 1 cup cooked, mashed sweet potato
  • 1/2 cup cooked wild rice
  • 1/2 of a thinly diced avocado
  • 4 halved brussle sprouts (boiled for 7 minutes)
  • 1 cup of fresh black kale
  • 2 small carrots, grated
  • 1/4 cup of broccoli sprouts
  • 1/4 chopped red cabbage
  • 1 spring onion, chopped
  • Juice from one lemon, and some to garnish
  • 1 tbsp EVOO
  • salt, peper, and garlic powder to taste


  1. Prepare all the vegetables mentioned above.
  2. Specifically the potato, rice and sprouts. I boiled the potato till soft, then mashed.  Cooked one cup of raw rice with 6 cups of water till soft… but do what is familiar to you.  I am tragic at cooking wild rice I find that it always takes me ages for it to cook perfectly.
  3. While your veg are cooking prepare the rest of the vegetables and set them aside.
  4. Once you have mashed your potatoes set them aside at let them cool.
  5. Now into a deep bowl begin assembling the bowl. I started by adding the potato and rice at the base them went from there!
  6. Have fun with it, and be creative! There is no wrong way to be healthy and eat nutritious foods.  Your body. Your fuel!
