 Seeking a simple salad recipe, but sick of all the fuss around preparing the ingredients? Well lucky for you I am presenting the classy Buddha Bowl salad that quite literally involves using your left over veg, and prepped foods to make a salad!  It is a easy as opening your fridge, picking out your favourites, and assembling something tasty within minutes! See, back to basics is not to hard after all!

This dish specifically is gluten free, dairy free, healthy and plant based! I would totally recommend this type of salad for when you are in a time crunch, or when you are on your last leg for groceries and are trying to think up creative ways to use the rest of your ingredients.  I know this salad will help you get funky in the kitchen, and get you playing with your favourite flavours and vegetables (shh.. do not tell you mom I am suggesting you play with your food)!

The base of this bowl is protein-rich quinoa, and sweet potatoes which take under 25 minutes to prepare (or not time at all if you already have them prepped in your fridge from the beginning of the week!)

Just cut your veg

Spiralize your zucchini

Choose your favourite pesto

Assemble and Enjoy!

Note: I recommend always using organic whole foods like fresh veg and fruit (or at least when you can), and if you love lemon as much as I do then you might want to add just a drop or two to this salad! It adds a lot of pop! Totally optional!

Ingredients

  • 1 cup cooked quinoa
  • 1/2 cup sweet potatoes, oven roasted
  • 5 baby carrots (I didnt chop them for picture purposes but I would thinly slice them)
  • 1/2 cup of raw red peppers
  • 5 cherry tomatoes, halved
  • 1/4 of an avocado, thinly sliced
  • 1 cup of zucchini, spiralized
  • 2 tbsp chopped up walnuts
  • edible flowers – optional
  • 1 tbsp pesto
  • dash of sesame seeds

Instructions

  1. Prepare your veg, and set them aside. Make sure they are washed well!
  2. Into a medium sized bowl begin to assemble your ingredients.
  3. I start with the quinoa, and potatoes.. then I add the rest.
  4. My favourite part is at the end when I get to toss all the ingredients together and enjoy this big bowl of yumminess!
  5. Enjoy because it is THAT easy!
