Carnival Food Part 2: Banana Cacao Pops

Good morning beauties, hope everyone is doing well, and are excited about this beautiful long weekend – thank you rain, the north needs it!  I finally managed to get myself a weeks worth of normal sleep (6 hours, I know, still working on it) and I am feeling well rested now that I have got more than 4 hours of shut eye a week!

I have been quite busy in the kitchen, at work, in the studio, and volunteering so I opted to take these past few days to adding more recipes to the blog for you lovelies. As a part of My Carnival Series recipes I present to you the Second Recipe, Banana Cacao Pops!  So simple, delicious, and nutritious. Topped with super foods to give you all that extra burst of energy that I know we all need this time of year!

I used topping like groats, gojis, and pumpkin seeds. I will briefly just go over their benefits, and why I think you all need to incorporate them into your everyday diet!

Benefits of Buckwheat Groats:

  • vitamin B
  • great source of magnesium and manganese
  • phosphorus
  • zinc
  • copper
  • potassium
  • selenium

All of which help reduce the risk of Chronic Disease and provide strong nutrients!

  • good source of fiber

  • four ounces of goji berries even contains 10 percent of the suggested amount of protein, AND IT IS PLANT-BASED!
  • they raise blood sugar slowly, so no crash afterwards – THIS MEANS THEY ARE LOW GLYCEMIC

Carnival Food Part 2: Banana Cacao Pops

Ingredients

  • 3 bananas, halved
  • 6 popsicle sticks
  • Chocolate Sauce:
  • 2 1/2 heaped tbsp of cacao powder
  • 1 tbsp coconut nectar
  • 1 tsp of almond milk – add more if needed
  • pinch of salt
  • 3 tbsp vegan chocolate chips
  • Toppings:
  • Groats
  • Chopped up Pumpkin Seeds
  • Goji Berries
  • Unsweetened Desiccated Coconut

Instructions

  1. Line a baking sheet with parchment paper.
  2. Peel 3 bananas, and halve them. Push your popsicle sticks into the, around half way and set aside!
  3. HInt: The skinny side of the banana should be the top of the pop!
  4. Fill a medium sized sauce pan half way with water, and bring it to a boil then simmer.
  5. Into a medium sized bowl add all the ingredients for the Chocolate Sauce.
  6. Place the bowl over the sauce pan and stir gently.
  7. Make sure the water is not touching the bowl, otherwise you will burn the chocolate.
  8. Stir until you reach a silky smooth consistency.
  9. Add more almond milk if you find the sauce too thick but only a tsp at a time!
  10. Once you reach the desired consistency remove the chocolate from the hot water bath, and begin to dip/poor chocolate onto your bananas.
  11. Place them onto the parchment paper, and repeat.
  12. Once you’re done sprinkle on the toppings, and set in the fridge to cool for at least 30 minutes before eating.
  13. You will notice that chocolate does sort of stick to the paper, but thats nothing a finger can’t fix!
