Snacks for Kids Part 1: Chocolate Watermelon Pizza

  • Author: Maria Koutsogiannis
  • Prep Time: 20 mins
  • Cook Time: 4 mins
  • Total Time: 24 mins
  • Yield: 2 1x
  • Category: Plant Based
  • Cuisine: Snacks

  • Chocolate:
  • 1/2 cup of cacao powder
  • 1/4 cup coconut oil
  • 1/4 cup sweetener
  • 2 tbsp vegan butter – regular is fine if you’re not plantbased!
  • handful of vegan chocolate chips – once again regular are fine
  • Watermelon- sliced whole, around 1 inch thick
  • Blackberries
  • Oranges
  • Strawberries
  • Mangoes
  • Optional:lemon zest for added punch

  1. Cut your watermelon into one inch thick slices, I made two pizzas… and set aside.
  2. Now prepare your chosen fruit, cut and slice how you like, and according to your children’s needs and set them aside as well.
  3. Now for the sauce..Into a medium sized bowl (NOT PLASTIC)combine all the ingredients for the chocolate.
  4. Fill a medium sized pot about 1/4 full, then bring the water to a boil, and then simmer on very low heat.
  5. Place the bowl over the pot (you have now created a water bath..YIPPIE) and let the mixture begin to melt.
  6. Stirring the mixture gently, making sure that the water does not touch the bowl or else the chocolate will burn.
  7. It should take around 3-4 minutes to melt.
  8. Once it is melted set aside and let it cool for a few seconds!
  9. Prepare your platter on a wooden cutting board or platter board.. add the watermelon first and begin to pour the chocolate mixture on top of it. It won’t take long for it to cool and harden so as fast as you can begin to add your additional fruits to the top of your pizza! Finish it off with a bit more chocolate, and the optional zest! Yum!

I’ve actually tried a variation of some of these and they worked perfectly and everything tasted delicious! Excited to try out some different variations! Thanks!
