This delicious creamy spin on a classic chimichurri sauce is so good you'll want to put it on everything!

Chimichurri sauce is an uncooked sauce that is used as an ingredient in recipes, or as a condiment. It’s found in Argentinian and Uruguayan cuisines, and it’s so damn delicious! This version I made is a little different than the traditional chimichurri recipes you’ll find as I’ve used cashews to make it creamy (and more protein-rich).

  • Creamy: I love a good creamy sauce to put on wraps and sandwiches, and this one adds so much flavor
  • Versatile: Seriously, put this on ANYTHING! It’s so good.
  • Quick: Make this chimichurri in just 5-minutes. That’s it!

Ingredient Notes:

Herbs: The key ingredient to a good chimichurri sauce is the fresh herbs. This is what makes the sauce POP! You can use parsley OR cilantro here. Or if you’re feeling crazy, a mix of both, plus oregano. DO NOT swap these for dried herbs instead.

Cashews: The cashews are unique to this recipe and add a pop of protein and nutritional value. Cashews are often used in sauces to get that creamy consistency without adding cream, or dairy products.

How to make chimichurri sauce:

  1. Add all of the ingredients to a blender.
  2. Blend until smooth.
  3. Adjust seasoning to taste!
  4. Enjoy this crema with tacos, chips, salads or anything you desire!

Expert Tips & FAQ:

What can I use instead of cashews? Instead of cashews, feel free to use almonds or avocado! 

Herbs: We decided to use multiple delicious herbs from my garden! You can do it too and customize your chimichurri crema. Traditionally there is a large amount of parsley in it, so feel free to do that! Mix it up, it will all be delicious!

Storage: Store the chimichurri-inspired crema in a jar in the fridge for 3 – 5 days!
