Eat Your B’s and C’s Salad

Hello beautiful! I am here to introduce you to the simplest salad ever! Perfect for meal prep – double the recipe – , and even better for on-the-go-jar-salads.  It takes less than 10 minutes to prepare, and is really fuss free.  Making minimal mess in the kitchen, using one bowl, and eight ingredients!  This salad is sure to become your best friend this busy summer, so you best get making them now so you can start creating your own variations!

You’ll be the salad queen before you know it!

This salad is packed with:

  • Plant Based Protein
  • Mediterranean flavour
  • Healthy Fats

You can app it up by adding some hot sauce! Damn, I did it, and it tasted good!

As mentioned above, and in the recipe you can totally double this recipe to easily create a meal prep for the week! It will last in the friend for around 5 days, and like wine it will get better with age! Bless you lemon!

Eat Your B’s and C’s Salad

Ingredients

  • 1 can chickpeas, strained and washed
  • 1 cucumber, cubed
  • 1 cup of basil, finely chopped
  • Juice from one lemon
  • 4 tbsp EVOO – Kouzini Olive Oil
  • 1 tsp salt
  • 1 tsp fresh cracked pepper
  • 3 tbsp vegan parmesean cheese

Instructions

  1. Into a large bowl combine all the ingredients but the vegan parmesan!
  2. Stir till well combined, then sprinkle each bowl with a bit of vegan parmesan!
  3. Should make around 4 salads, or 2 if you are eating them as your main entree!
  4. I suggest making double so you can store this easy salad in your friend as prep for the week!
