This super simple Greek Salad Dressing Recipe is creamy, vegan-friendly, and so versatile. Use it on your Greek salad, or your fav cooked veggies.
1 cup fresh, high quality olive oil
1 tbsp. dried oregano or 1 large handful fresh oregano, finely chopped
1 tsp sea salt
1/2 tsp black pepper
Juice of 1–2 medium-sized lemons, around 1/4-1/2 cup
1 tbsp. red wine vinegar
3 small garlic cloves, pressed
To a medium-sized mason jar add all the ingredients and shake till well combined.
Use immediately and store it in the fridge for at least 10 days.
This dressing is great for marinating vegetables, tofu, tempeh or even feta!
Get creative, if you want to add dried thyme or dried rosemary that would work great too!
