Good morning hunnies! Feast your eyes on these pretty incredible Matcha Muffins, made using EATCLEAN TEA Matcha. These muffins were originally inspired by the lovely Trois Fois Par Jour, such an incredible site, and wonderful vision behind everything they do! Was just so obsessed, so I recreated them with my twist, and the ingredients I had available in my home!


I was super excited to try something new with Matcha, but to be honest I was I was also super scared to cook with it because I really did not now how the flavour of it would turn out in baking.


Thankfully these little nuggets turned out amazing! So rich, fluffy and full of flavour.  Perfect for breakfasts, and snack time.

The Matcha flavour is super light, and subtle.  You still get hints of the Green Tea taste, but there is nothing really wrong with that now, right!?!

Matcha and Chocolate Chip Muffins

  • Chia egg:
  • 1 chia egg (1 tbsp chia seeds, 3 tbsp warm water)
  • Dry ingredients:
  • 1 1/2 cups spelt flour
  • 1/4 cup oats
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 to 2 teaspoons matcha green tea powder, EatClean Tea
  • Wet ingredients:
  • 1/4 cup agave
  • 1/4 cup maple syrup
  • 1 mashed banana
  • 1 cup unsweetened coconut milk.. keep adding if the mixture is to thick at first
  • 3 tbsp coconut oil
  • handful of vegan chocolate chips
  • Coconut oil spray for the muffin tin


  1. Preheat the oven to 350˚F.
  2. Grease your muffins tins with coconut oil, I lined them with parchment paper muffin casings
  3. Prepare your chia egg, and let it sit for around 10 minutes.
  4. Into a bowl, combine all the dry ingredients. Stir well, to avoid lumps and set aside.
  5. Into another bowl combine all the wet ingredients, and stir well. .
  6. Add the wet ingredients to the dry ingredients and stir.
  7. Add the chocolate chips, and chia egg. Stir one last time.
  8. Bake for 12 minutes, or until you pass the tooth pick test!
  9. Remove from the oven and let the muffins cool for 20 minutes in the pan.
