Start your year off right with this super easy meal prep recipe. It's a plant based quinoa salad that is sure to set you up for success.

Quinoa Salad – Bob’s Red Mill

  • 2 1/2 cups cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup roughly chopped cilantro
  • 1 cup sweet red pepper
  • 1/2 cup cucumber
  • 1/2 cup olives
  • 1/4 cup capers
  • For the dressing:
  • 3 tbsp olive oil
  • Juice from 1/2 to one Lemon
  • season to taste
  • 2 tbsp dried oregano


  1. Into a small jar combined the ingredients for the dressing, and shake well! Set aside.
  2. Simple add all your salad ingredients into a large mixing bowl and stir.
  3. When serving add dressing just before eating!  If you love infused flavour then add it all to the mix and enjoy throughout your day or add to a jar for easy lunch access!
