- 1 cup ice
- 1 cup fresh pineapple (you could use frozen)
- 1 cup coconut yogurt yogurt
- 2 tbsp coconut cream
- 1 tbsp coconut nectar
- dash of salt
- 1 tsp of fresh lime juice
- Place all ingredients into a blender and puree on high for 30 to 60 seconds – mine looks different because I blended the pineapple on its own, then the rest of their ingredients on their own to create a layered effect.
- Pour into a glass, garnish with a wedge of pineapple or mint and serve up ASAP.
