Good lord! This recipe is so dang delicious. I mean, I say that about all food, but I’m serious. Can you really go wrong with anything that has pasta and garlic in it? I think not! This aglio e olio recipe will knock your socks off. Plus, it takes under 30-minutes to make so you won’t be spending all night in the kitchen whipping up a meal your whole family will love.

Ingredient Notes: 

Garlic: A lot of people don’t realize how good garlic is for you. It is actually packed with health benefits! Here are just some of the reasons we should consume it: 

  • It’s a blood purifier
  • Can help fight off (and relieve symptoms) of the common cold & flu
  • Helps prevent heart disease
  • Contains anti-bacterial and anti-parasitic qualities
  • Several studies have shown it can help prevent cancer
  • It is great for your skin & hair

It also has a lot of weird uses. For example, it can apparently help with athletes foot, you can rub it on acne to help remove bacteria, can soothe psoriasis, a slice of it can help you remove a splinter, and it can even help fight off mosquitoes in the summertime. Weird right?

Olive Oil: Since there are minimal ingredients in this recipe, you’ll want to ensure you buy and use a quality olive oil for the maximum flavor. Look for oil labeled “extra virgin” and make sure to buy it in a bottle that isn’t clear, as light can deteriorate the flavor. 

Parmesan Cheese: You can use vegan or regular parm here. You can even make your own vegan parm by using cashews, nutritional yeast, garlic powder and sea salt. See the full recipe here. 

How do you make aglio e olio?

  1. Bring a large pot of water to a boil and generously season with salt.
  2. Cook spaghetti till al-dente and set aside once cooked.  Reserve 1/4 cup pasta water.
  3. To a medium-sized pan or cast-iron skillet add your olive oil and heat on medium for 30 seconds before adding the garlic.
  4. Cook down the garlic for 5-6 minutes, stirring often to avoid burning. Once golden and fragrant, add the parmesan cheese – evenly over the entire pan – and cook down for 1-2 minutes.  Dust with chili flakes (as desired) and add your pasta to the pan.
  5. Add reserve pasta water, a tiny pinch of sea salt, black pepper and fresh thyme or parsley. Cook, coat and toss till hot throughout.
  6. Enjoy hot with a glass of wine and warm, crispy garlic toast.

Expert Tips & FAQ: 

Get Creative: Like with most pasta recipes, this recipe can be altered to fit your preferences or cravings. You can toss in tomatoes, squash, spinach, capers, or whatever you have in your fridge. 

What kind of pasta should I use? I like to use spaghetti but you can really use any kind that you have on hand. 

Can I use jarred garlic? Totally! I find that jarred garlic isn’t as flavorful as fresh due to the fact that it isn’t fresh, so you may want to do a little taste test to ensure you have the right amount!
