Bring a small pot of water to a boil, add the orzo, and cook based on the instructions of the package.
In a large bowl, combine all of the ingredients.
Stir well until combined.
Add extra olive oil, seasoning, cheese, or extra herbs to taste- then enjoy!

Instead of the Spred’em cheese, use the Cilantro Cashew Cream.Replace the orzo with quinoa! Absolutely delicious! Add anything to this salad and enjoy it as an on-the-go lunch, bring to potlucks, etc.!! Store this Mediterranean Salad in the fridge for 4 - 5 days in an airtight container.
