Did I read this right? 20 Minute Tarts! Did FoodByMaria – the healthy nut – make Puffed Pastry Tarts? and in 20 minutes?

I think I did.

I had a mad craving for something salty, creamy, and crispy so I decided to make these super simple tarts.  I genuinely did not even plan on posting this recipe but since I had so many friends, and family ask for it, why not!

This dish is plant based, dairy free, and hella-good! Unfortunately it is not GF but I am sure there is a puffed pastry out there for you somewhere!

Most of the time I have no time to do anything, and I mean it.  The only reason I eat most of the time is because I am eating a recipe I created, or tested. I mean seriously, thank god for my meal preps or I would be eating dips, and oats 24/7! That is why the recipes I make are super awesome! They take no time. They taste delicious.  Are super nutritious (most of the time). Puffed Tarts with Veg + Balsamic Reduction

Ingredients

  • 1 sheet of puffed pastry – I used plant based, but use what works for you!
  • 6 fingerling potatoes, sliced really thin
  • a few purple daikons for colour, sliced thin
  • 1 large red tomato, sliced
  • 2 tbsp of capers
  • 2 tbsp vegan butter (does not have to be vegan)
  • 1 tbsp of balsamic reduction
  • dill for colour, and beauty to garnish!
  • salt, and pep to season (does not need much!)

Instructions

  1. Preheat your oven to 375F
  2. Prepare your puffed pastry sheet by cutting into into four squares.
  3. Now prepare your veg by washing, cutting, and slicing!
  4. Begin placing your toppings (but use what you want) onto the raw pastry. I added the potatoes first, then the tomatoes, then everything else did not matter.
  5. Before I placed them into the oven I melted the butter, and drizzled it over the raw tarts.
  6. They cooked for 10 minutes on bake setting, then 5 minutes on broil.
  7. Once they reach a beautiful golden colour you can remove them from the oven!
  8. Finish off with balsamic reduction, salt + pep to taste, as well as the fresh dill!
  9. Enjoy!
