These quinoa and spinach patties are healthy, great for meal prep, and the whole family will love them.
For the patties:
4 cups cooked quinoa
2 tbsp. Chosen Foods Lemon Garlic Dressing
2 eggs or 2 vegan eggs
1/4 cup vegan feta or regular feta, chopped
1/4 cup green onion, fresh mint, dill, and cilantro
4 garlic cloves, grated or pressed
1 tsp sea salt
1/2 tsp black pepper
dash of red pepper flakes
3/4 cup steamed spinach, squeezed to remove excess water
1 1/2 tbsp. Chosen Foods avocado oil for cooking
For the Lemon Garlic Aioli:
2 cups Chosen Foods Avocado Mayo
Juice of half a lemon
1 tbsp. dijon mustard
3 cloves of garlic, pressed or finely chopped
3 tbsp. capers
Preheat your oven to 400F and line a large baking sheet with parchment.
To a large mixing bowl, combine all your ingredients apart from the avocado oil. Stir with a wooden spoon to well combine. Using an ice scream scoop (around 2 tbsp.) begin moulding your patties. First into balls then flatten to firm.
Using a brush lightly grease the base of the parchment paper with the avocado oil.
Place them on the baking sheet and bake for 20-23 minutes. Flipping them halfway through.
While the patties cook, make the Aioli by combining all the ingredients into a small bowl and stirring to combine.
Once the patties are ready, enjoy immediately or as meal prep. Serve with your desired amount of Lemon Garlic Aioli!
To make 1 vegan egg you need 3 tbsp. warm water and 1 tbsp. ground flax seeds. Combine, stir and set.
