Quinoa + Cabbage Jar Salad

A salad that is easy, delicious and good for you? I think yes!! We are all leading very busy lives, and are constantly on the hunt for a simple, but energizing meal.  So in hopes to meet all of your needs I have come up with this basic, beginner salad.

This salad is:

  • Vegan
  • Has Sugarless Dressing
  • Rich in plant-based Protein
  • High in Healthy Fat – HEALTHY FATS HELP BURN FAT NATURALLY AND HEALTHILY 
  • Gluten free

This salad requires 1 bowl, 7 ingredients (+ for the Dressing) and 5 sterilized jars! That is it!

Quinoa + Cabbage Jar Salad

Ingredients

Scale
  • 2 1/2 cup of cooked quinoa
  • 1 cup chopped up yellow pepper
  • 1 cup of cannellini beans
  • 3/4 cup chopped red cabbage
  • 1/4 cup diced sugar snap peas
  • 1/2 cup of chopped kale
  • 1/2 a cup of parsley
  • Dressing:
  • 3 tbsp EVOO- Kouzini
  • 1 Cayenne Infused Oil – OIl + Vinegar (optional if you’re feeing kids, if yes just use 4 tbsp reg EVOO)
  • Juice from one Lemon
  • 1 tsp salt
  • 1 tsp fresh cracked pepper
  • 2 tbsp dried oregano

Instructions

  1. Into a small jar combined the ingredients for the dressing, and shake well! Set aside.
  2. Prepare, wash and dry your veg and begin to chop them all up!
  3. Once you have them all prepared add them to a bowl with the quinoa and stir it all nicely, add dressing and enjoy with your family! This Salad will last in the fridge for 5 days!
  4. If you’re eating it in a jar first add a bit of the dressing to the bottom, and then layer bits of each veg, and quinoa to the jar and finish off with a tiny bit more dressing. Seal and take with you on your busy day!
