If you’re being a responsible human, you are probably currently locked inside your house for the foreseeable future during COVID-19. Yes, the isolation, combined with the constant stream of terrible and scary news in all our feeds can be overwhelming. That’s why it’s more important than ever right now to make sure you are eating healthy, nutritious meals. Not only will they keep your body healthy and happy, but cooking and spending time in your kitchen, away from screens, can really do wonders for your mental health right now too. This roundup includes some of my favourite recipes that can easily be made with typical pantry ingredients you likely already have in your house. 

For starters, I want to mention how versatile these recipes are. If you don’t have the pantry ingredients listed, get creative and look for substitutes that could taste just as good. This is a great time to use up the food you already have in your house versus running out to the chaotic grocery stores right now. 

Curried Tuna Stuffed Sweet Potato

Tuna and potatoes are always key ingredients in everyone’s pantry. If you’re not vegan, you can easily use regular tuna in this recipe. 

Vegan Potato Salad 

This recipe can really taste good with many substitutes. Don’t have fresh herbs? Use dry. Don’t have the veggies mentioned? Throw in what you do have! 

Crispy Roasted Potatoes 

Again with the potatoes Maria? Yes, these are damn delicious and who doesn’t always have some potatoes on hand?

Vegan BBQ Black Bean Meatballs 

These vegan black bean meatballs are so damn tasty and filling. They’re easy to whip up, and will please even the pickiest eaters in your house.

Vegan Creamy Carrot & Ginger Soup 

Great for your immune system, plus, ginger and carrots both last quite a while in your pantry/fridge. Even if your carrots are getting a little soft, it’s a great time to throw them in a soup so they don’t go to waste.

White Bean Chili 

Mainly beans, dried herbs, and onions used here. Super easy, and can be versatile as you can add in your fav types of beans, or veggies to the recipe. That’s the best part of chili, there’s no right or wrong way to do it!

One-Pot Greek Pasta 

Nothing beats an easy, hearty pasta dish. Right? Get creative on your veggies you throw in here if you don’t have all the ones I listed. 

Zuppa Toscano Soup 

Swap out the kale with any hearty green you have in your fridge or freezer (did you know you can freeze spinach & kale for soups). 

Orzo Vegetable Soup 

Again, throw in your fav veggies, or the ones you have in your freezer or fridge. Great recipe when things are also starting to go bad to eliminate food waste.

Hearty Vegetable & Mixed Bean Stew

Stew has got to be one of the most comforting types of food. This vegan stew is incredibly forgiving too so it’s easy to make it your own with whatever pantry ingredients you have.

Vegan Bean & Lentil Chili 

Lentils are a great source of protein, and this wholesome, hearty chili is super healthy and comforting. Throw in your fave veggie & beans, and call it a day!

Brown Butter & Spice Sweet Potato Casserole 

This is one of my favourite sides, but you can totally eat it as a full meal if that’s your thing.

You know I love this sauce. It’s so damn good and it’s easy to make. Make up a big batch for the whole family, and be set for delicious, healthy meals for multiple nights in a row!
