A treat that is rather good for you, easy to make, and a simple clean in the kitchen? Could it possibly be?  I reckon so guys, and this is saying a lot for a girl who rarely bakes pastries, and treats too far out of her comfort zone.  This absolute delight is perfect for your next lunch date dessert, or for when you have family and friends round for dinner, and want to wow them with your mad skills, but really do not want to put in loads of effort to create something delicious!

This Galette is sweetened with beautiful Peaches, and little amounts of Coconut Sugar! Although the recipe does call for butter I try not to think about it too much.  I rarely eat butter, and truly believe that your body needs fat and healthy fats to help burn bad fats, and fuel your body in aid to creating a well balanced, strong, and fierce machine – your body!

The Rustic Peach Galette

  • For the Crust:
  • 1 1/3 cups whole spelt flour
  • 3 tbsp coconut sugar
  • 1/2 tsp baking powder
  • 1/2 a cup of vegan butter, (cold, and cut into cubes)
  • 3 tbsp coconut milk
  • 1 tbsp water – if needed add more
  • For the Fruits:
  • 1/4 cup coconut sugar
  • 3 tablespoons spelt flour
  • 1/2 teaspoon ground cinnamon
  • 6 soft peaches, peeled, halved, pitted, and cut into thin 1/4 inch wedges


  1. For the pastry:
  2. Into a large mixing bowl add your flour, sugar and baking powder, and butter. Using your fingers mix everything until you reach a crumbly/sticky consistency. You could also do this using a food processor, just blend for around 30 seconds.
  3. Now add your milk, and water. If the mixture does not come together to your desire just add a bit more water.
  4. Form your mixture into a ball, wrap it in cling film, and set it in the fridge for around 1-2 hours.
  5. minutes before baking preheat your oven to 375F
  6. Now you can roll our your dough ball into the shape of a galette. I think mine was around 10-12 inches.
  7. Set aside.
  8. For the fruit:
  9. Cut your peaches, add into a large mixing bowl add the sugar, flour, and cinnamon. Stir till well combined.
  10. Assembly:
  11. Starting 1 1/2 inches from the edge of the dough begin to arrange the peaches in a single layer in a circle, and continue until you reach the centre of the round.
  12. Fold the outer edge of the galette over, and pinch the sides well so that your filling stays nice and tight.
  13. Make sure you try to avoid excess ‘juice’ in your filling, as you do not want a watery crust.
  14. Bake at 375 for around 40-45 minutes or until golden, and beautifully bubbly!
  15. Serve cold or hot!
  16. Enjoy!
