Description

This Shaved Cucumber Salad is entirely vegan, delicious, and perfect for a summer BBQ, as a side, or for a fresh lunch.

Ingredients

1 1/2 cups cooked quinoa, cooled

1 large cucumber, peeled or shaved

3 tbsp. pumpkin seeds

3 tbsp. Patience Fruit and Co. dried blueberries

1/4 cup vegan or regular feta

2 tbsp. capers

1 large shallot, sliced

handful fresh oregano + fresh thyme, finely chopped

Dressing:

2 tbsp. olive oil

2 tbsp. maple syrup

1 tbsp. dijon mustard

juice of half a lemon

1/2 tsp salt

1/2 tsp black pepper


Instructions

Prepare all your salad ingredients by placing them into a large mixing bowl.

To prepare the dressing, add all the ingredients to a medium-sized jar and shake till combined.

Gently combine all the salad ingredients and dress as desired.

Notes

A good vegan feta brand is Violife.

If you do not have maple syrup then honey is perfectly fine.

If you do not have access to fresh oregano and fresh thyme, just use 1 tsp each of the dried spice.
