Hey love birds!! I’m back with yet another recipe! I made this lovely little treat for a special day, it was tuesday, ha. I wanted someone thing delicious, healthy and sweet that my sister and I could enjoy. It hit the spot, left me feeling no guilt… like Nutella, Oreos, and over sweetened “dark chocolate” normal would.
I admit it this is not exactly the simplest of recipes, but they cannot always be. I am a huge advocate for having good time in the kitchen. It is a place where I can be myself, forget about my to-do list and just do what I do best, create. Although I do suffer from OCD and cleaning in the kitchen while creating always interferes I still manage to have a really good time. There is truly something to be said about the endorphins that are released in the kitchen if you do truly love it and have a passion for it.
I used the really delicious SquareBar to come up with this creative little stack of joy…. the Chocolate Coated Cherry Bars are seriously amazing! I carry them in my gym bag, and enjoy them at least 2-3 times a week! So handy to have with me as I do literally eat all of the time. Im not joking. I don’t stop eating. You have to in order to stay fuelled and muscly. It is the key to muscle success. Eat well, more often!

1/2 cup of dates (soaked in warm water for 5 minutes)
2 tbsp cacao
1 tablespoon melted coconut oil
Second layer: raspberry chia jam
1 cup raspberries
1 tbsp chia seeds
1 tbsp coconut milk
Third Layer: SquareBar Cake
1 Chocolate coated cheery squarebar (chopped into cubes)
1 dried cherries (soaked in warm water for 5 minutes)
Coconut Yogurt Layer:
1 cup coconut yogurt
1 tsp Neals Yard Remeides Organic Berry Complex
Into a food processor add all the ingredients for the brownie layer
The ingredients will start to firm up, and get quite thick. You know it has blended enough when you can pinch the mixture and it holds its shape.
I used a small plate and started to mould the mixture into a small ish square, about 1 inch thick… and I plopped it into the freezer for 30 minutes
Clean your food processor, and add the ingredients for the square bar, blend till really sticky (clumpy), and form into another square and set into the freezer for a few minutes just till it firms up nicely.
Now prepare jam. Combine all ingredients to a sauce pan and cook on low heat for 5 minutes, stirring often.
Now prepare “cream”. Literally just mix the yogurt, and the superfood together with a spoon till well combined, and pop it in the fridge just till your about to assemble the cute little work of art!
Remove both the brownie, and square bar from the freezer. Using a large cookie cutter cut one round piece of of each and begin assembling.
I started with a layer of brownie, then jam, then square bar, then more jam, cream and topped with more little crumbled up bits of brownie!
