Okay, I know it’s not summer yet, but this recipe will make you feel like it is. The fresh strawberries and cucumber offer a mix of sweet and savory in this easy strawberry cucumber salad recipe that is a perfect way to add a pop of color to your dinner table (or any meal).

Strawberries: Packed with nutrients that help protect your heart, keep your cholesterol healthy, and even aid again cancers, strawberries are little powerhouses. They have vitamins, fiber, and high levels of antioxidants. 

Cucumber: Cucumbers do a great job of keeping you hydrated, plus, the fiber boost they give you can help with digestion. Cucumbers also are a source of vitamin K, and A. 

How to make strawberry cucumber salad: 

  1. Thinly slice the strawberries, cucumber, red onion, and basil. If the mint leaves are small. However, if they are large, slice as well. 
  2. Mix and arrange all of the ingredients onto a large platter or in a bowl.
  3. To make the dressing, add all of the ingredients to a small bowl, and mix to combine.
  4. Evenly pour the dressing over top of the salad for presentation.
  5. Toss the salad prior to serving.

How can I make this salad vegan? Make this vegan by replacing the feta cheese with your favorite plant-based feta.

Storage: Store the salad in the fridge in an airtight container for 3 – 4 days.

Can I use other berries? You can! Strawberries are great because of their consistency. Raspberries tend to get too mushy in a salad, but you could try this with blueberries!

Ingredients
  

  • 16 oz strawberries
  • 1 ½ long English cucumbers
  • ½ medium red onion
  • ¼ cup feta cheese
  • 1/3 cup fresh mint
  • ¼ cup fresh basil chopped

For the dressing:

  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar or glaze
  • dash of salt and black pepper

Holy this is amazing! We used mozzarella because our family isn’t a fan of feta but everything else together is delicious! I added some honey to the dressing so the mozzarella could get some sweet taste, this makes me want to eat salad everyday! Thank you!
