Good morning all you beautiful people… today is unlike most as I woke up super happy, but then noticed a beautiful friend of mine write a sad post about her home country.  My heart immediately felt very heavy and sad for the people of Turkey, they hold such a close place in my heart.  Tragedy hit Istanbul and I cannot begin to tell you how close to home this feels for me.  I know and have met so many people from this beautiful part of the world, and I am so deeply saddened by how cruel some of us have become. Last I heard 10 innocent lives were lost.  Some of you might be thinking this is sort of weird to include in a food blog post, but I like to keep my posts raw and organic, so I am telling you exactly how I am feeling right now.  And I am feeling sad.

Almost four years ago I embarked on a long journey to travel the world, and I met so so so many beautiful people from the Middle East and from Asia. All so happy, passionate, and beautiful people. Why do some of us find it so hard to see what lies within instead of these things we ourselves, as people, cannot control.  We cannot control our race, we cannot control the colour of our skin, the name our parents so happily chose for us, or the country we reside in.  More importantly, or religion should never become a reason to feel ashamed, or embarrassed.  I can only hope that we all begin to accept people for who they are, and for the people we believe them to be.

I know I cannot do very much right now to help lighten this whole dark situation but hope that everything will work itself out….so lets do our best to spread peace and happiness whenever we best can!

but ON A MUCH LIGHTER NOTE… I want to apologize for being MIA for a bit.  I got really into relaxing while I was in England, and it has proven to be a bit more difficult that anticipated to get back into the ninja-lifestyle-groove-of-things! I promise you I am here to stay now, and that I have a lot of amazing recipes, and posts coming your way!

As Promised here is the sort of recipe for the Stuffed Spaghetti Squash Salad I posted on my IG a few days back (@foodbymaria) for those of you who do not already follow, go take a peak!  You will notice that this recipe is not really a recipe as I only mention the ingredients I used to fill this salad with love.  I did this because I really want to give all of you the opportunity to play with your ingredients, and see what works best for you.  It is so simple to choose your favourite seasons veg and fruits, or just veg and fruits and fill the squash with so much flavour! I did include the amazing Tahini Drizzle which I personally think can be used to add punch to any dish.

Stuffed Spaghetti Squash Salad

Ingredients

  • All Organic
  • Salad:
  • 1 small Spaghetti Squash – baked for 1 h and 15 minutes at 350. I cover mine with foil, and halve them.
  • Pomegranates
  • Pea Shoots
  • Watercress
  • Pine Nuts
  • Sesame Seeds
  • Tomatoes
  • Red Pickled Beets (I just soak sliced beets in 2 tbsp Apple Cider Vinegar, 1 tsp salt, and a dash of EVOO for about 30-45 minues, but the longer, the better!)
  • Dressing:
  • 1 tbsp vegenaise
  • 1 tbsp tahini
  • Juice of half a lemon
  • 1 pinch of salt and pepper
  • 1 tsp EVOO

Instructions

  1. Bake Spaghetti Squash as instructed. Remove from oven, and let it cool till basically warm or cold.
  2. Using a fork pull the spaghetti squash apart!
  3. Add all your favourite salad ingredients, and finish off the salad by drizzling the amazing Tahini Dressing.
  4. Sorry this is not really a recipe as I beleive it can be made so much fun when people add what they like! I really hope you enjoy this super easy dish, and concept xxx
