Good morning everyone!!! Yay it is Friday! This week has been absolutely incredible here in Calgary in terms of weather.  I think we have skipped spring and jumped straight into summer!! I am completely ok with that, but I do pray for our farmers, so a bit of rain would do us good – looking up – I mean we need to eat, do we not?

A few weeks back I came up with this really simple Savoury Sweet Potato Bun for burgers but it is basically they best savoury pancake ever, and, for me, it is a winner for any group date brunch, meal prep, or breakfast!


Minimal prep, great ingredients, and simple, easy steps to follow!

They are especially perfect for people like me who do not eat a lot – or hardly any – meat but are still looking to fuel their bodies with loads of nutritional and energizing carbs! They also contain Nutritional Yeast which is rich in B-vitamins, folic acid, selenium, zinc, and proteins! SUPER SUPER SUPER GOOD FOR YOU STUFF… y’all should really be giving it a chance!


Perfect to have laying around in the fridge as a quick snack and even better to bring along with you at the gym to enjoy post gym with your other protein of choice!

Sweet Potato Pancakes

  • 2 tbsp chia seeds
  • 6 tbsp warm water
  • 2 cups sweet potato, cooked and mashed
  • 1/2 oats
  • 2 tbsp nutritional yeast
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • handful of coriande, dill or any of your favorite fresh herbs, very very finely chopped
  • 2 tbsp EVOO
  • Juice from half a lemon


  1. Prepare your chia eggs by adding the chia seeds, and water to a bowl, and letting it sit for around 10 minutes.
  2. Now add the rest of your ingredients to a large bowl and stir well, but do not over stir it.
  3. Add your chia eggs to the mixture.
  4. Now preheat a pan on high, and spray with coconut spraying oil.. like you would traditional pancakes.
  5. Decide on your desired shape of pancakes and begin to dollop the mixture onto the pan. Let each side cook for around 1 minute or 2… or just until beautiful and crispy!
  6. I ate these bad boys between layers on Beetroot Hummus, and gave it a dusting on nutritional yeast before adding sprouts and greens!
  7. SImple, and delicious. Enjoy!
