The Rustic Squash Casserole

  • Ingredients:
  • 2 medium spaghetti squash (baked and skinned)
  • 1 cup of fresh tomato purée
  • 2 cups of organic spinach
  • 1/2 cup grated organic unpasteurized cheddar
  • 1 tbsp salt
  • 1 tbsp garlic powder
  • 1 tsp cracked fresh pepper
  • 2 Tbsp EVOO


  1. Into a large mixing bowl combine all ingredients but cheese and mix well. Now add the mixture to a casserole dish and sprinkle on shredded cheese. Baked at 375 for 30 minutes, and then broil on high for 10 minutes.
