I’m taking some of my favorite, easy vegan recipes and compiling them together as an easy resource for beginners who want to eat more plant-based but don’t know where to start. These vegan recipes for beginners are simple, nutritious, and delicious. I’ve also included as a bonus, my favorite make-ahead bean salad recipe at the bottom.

Salad Recipes for Beginners

Rice Paper Rolls
Not a salad but similar in terms of freshness. These vegan rice paper rolls with peanut sauce are inspired by Vietnamese cuisine and culture. These rice paper rolls are fresh, delicious, and a great snack, appetizer, or lunch. This recipe is also a great one to get your kids involved in the kitchen. They can pick their own stuffing and it’s an excellent healthy snack for them.

Vegan Taco Salad 
I love a good taco salad. Tacos are amazing, and salad is so healthy and nutritious, so when you mix the two together, you really get a surprisingly delicious match made in heaven. This vegan taco salad is one you’ll want to make again, and again for dinner, meal prep, or a side dish. It’s packed with flavor, fiber, and protein from the lentils and black beans, and is seriously versatile.

Mashed Chickpea Salad
This one-bowl, simple recipe is just like your tuna salad sandwich but a vegan version. I love to use this recipe for an easy lunch or meal prep. I’ll eat it on bread, in wraps, with crackers, or just on its own. It’s good, healthy, and filling.

Move over Starbucks, I have a yummy treat that is going to knock your socks off. These Oatmeal Fudge Bars are a copycat of the Starbucks fan fav, and they are way cheaper to recreate a whole batch at home. They make such an easy vegan recipe for beginners.

Ingredients
  

  • 1 400 mL can of black beans washed, strained, and dried
  • 1 400 mL can of white beans of choice washed, strained, and dried
  • 1 200 mL can of corn kernels washed, strained and dried
  • 1 red bell pepper diced
  • 1 cup tomatoes of choice diced
  • 2 jalapenos seeded and diced
  • 1/2 cup red onion diced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • juice of 1 lime
  • 3 tbsp. olive oil
  • 1 tbsp. garlic powder
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 large avocado pitted and cut into cubes (only when serving or about to eat)

Instructions
 

  • Into a large bowl, combine all the ingredients apart from the avocado and stir till combined.
  • You can store it in the refrigerator in individual containers or 1 large container.
  • When serving, serve with the desired amount of avocado on top or tossed into your serving size. I recommend 1 avocado for 4 servings.

Notes

The salad will last in the fridge, in a tightly sealed container for up to 5 days.
Be sure to not add the avocado until right before you are eating it.
Feel free to play with this reicpe.  Swap it with any of your favorite veggies, spices or beans! Just keep the same ratios and you are set up for success!

As usual, a great recipe. I added extra lemon juice and olive oil and it keeps in the fridge for several days and gets better. Using lemon juice instead of lime.
