  1. Make pesto by mixing pesto ingredients with a mortar and pestle until combined. Alternatively, you can pulse the ingredients together in a small food processor or in a blender to combine. Set aside.
  2. Add cubed honeydew and watermelon to a platter or salad bowl and sprinkle with salt and mix. Then, add cubed feta and drizzle the pesto over, toss, and taste – season with more salt if needed. Garnish with fresh basil.

Ingredients
  

  • 1 small honeydew melon, cut into 1 inch cubes (about 4-5 cups)
  • 1 small watemelon, cut into 1 inch cubes (about 4-5 cups)
  • 1 cup feta cheese, cut into 1/2 inch cubes
  • 1 tsp salt

Pesto

  • 1 cup packed fresh basil
  • 1/4 cup olive oil
  • 2 tbsp walnuts
  • 1 garlic clove
  • 1 1/2 tbsp lemon juice (from about half a large lemon)
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • fresh basil for garnish

Instructions
