Prepare focaccia bread dough and then cover with a tea towel and let sit for 10 minutes. Fold dough according to recipe, letting sit for 10 minutes after each set of 4 folds.

Fully coat the dough in the bowl with olive oil. Cover bowl with plastic wrap and a tea towel. Let dough rest and rise in a warm spot at room temperature for at least 1.5 hours or until the dough is doubled in size.
