In a medium-sized bowl, combine the softened butter, brown sugar and vanilla extract with a hand mixer on medium/high speed until light and fluffy.
Add the all purpose flour and salt and mix on medium-low speed to combine - it will be a crumble mixture. Use a wooden spoon, spatula or your hands to fully combine into a cookie-dough like texture as it will be a thick dough.
Fold in the chocolate chips.
Scoop the dough into “ping-pong” size balls, approximately 2 tbsp worth.
Roll the cookie dough balls out with your hand, until smooth.
Place the rolled cookie dough onto a plate and place it in the fridge until ready to enjoy!
Notes
Have fun with it!! Instead of chocolate chips, use your favorite chocolate bar (chopped)- add nuts, seeds, dried fruit, etc. The possibilities are endless!
Store cookie dough balls in an airtight container for 5 - 7 days in the fridge or in the freezer for 1-2 months.
