To a medium sized pot, heat olive oil for 30 seconds on low-medium heat.
To the pot, add the white onion and cook on low-medium heat for 4 - 5 minutes. You simply want the onions to become golden, so do not overcook or burn.
To the same pot, add the garlic and feta, and cook for 1 minute before adding te spinach.
Let the spinach wilt down completely and cook off any excess liquid before adding in the olives and spices.
Cook everything down for another 5 minutes then add te vegetable stock.
Bring the stock to a boil, then add the @RightRice package contents to the pot.
Remove from heat and let sit for 10 - 15 minutes until the rice is tender.
Serve with fresh parsley and enjoy!
