In a food processor, add the feta cheese, Greek yogurt, lemon juice, lemon zest and a pinch of ground pepper and pulse until smooth and light. Alternatively you can use a hand mixer to whip these ingredients together.
Scoop the feta into a low, medium-sized bowl and set in the fridge until ready to use.
To prep the apples: melt butter over medium heat in a frying pan and add apples, honey and pinch chili flakes. Cook 5-6 minutes until apples have softened. Set aside to cool.
To assemble the dip, spread feta in a thick layer in low bowl or plate. Drizzle top with sauteed apples, another drizzle of honey if desired, chopped candied walnuts and chives. Serve with warmed pita slices.
