Cook pasta according to package directions and set aside while you make the stir fry.
To a large frying pan over medium-high heat, add 1 tbsp sesame oil. Once the pan is hot, add in the garlic. Cook for a minute and then add in the green onions and cook another minute.
Add in the vegetables and stir fry for about 5 minutes until tender crisp. Season with 1/4 tsp salt and pepper.
Turn to medium heat and add in sauce. Bring to a simmer and cook for a few minutes until slightly thickened. Taste and adjust seasoning with salt and pepper.
Remove from the heat and gently toss with the noodles. Serve topped with cilantro and chili flakes.

Feel free to swap out ingredients based on your tastes - switch the colour of the bell pepper; try snap peas instead of snow peas; try carrots even!
If you prefer, this can be served over a grain of your choice.
