This is one of my fav healthy snack ideas because it's quick and so versatile. These salad skewers can be made your own with whatever ingredients you wish.
Chop the pink lady apples, celery, brie cheese, and toasted sourdough bread into 1-inch pieces.
Set aside all prepared ingredients in separate bowls.
On each bamboo skewer, arrange the ingredients as followed: celery, apple, rigatoni, spinach leaves, brie, sourdough, spinach, apple, rigatoni, spinach, brie, sourdough, apple, celery. OR arrange in any way you desire.
Repeat these steps for all of the skewers.
Arrange all of the skewers onto a platter.
Drizzle the olive oil and balsamic vinegar over top of all of them.
Next, add all of the walnuts and press some of them into the brie cheese.
Season the skewers with salt and cracked black pepper.
Serve immediately and enjoy!!

Notes Instead of skewers, you can add this to a large bowl and make a Panzanella salad! Swap the rigatoni pasta and sourdough bread for whatever you wish! Even pick your top gluten free options! These skewers are AMAZING at BBQ’s and parties. Customize these however you’d like by adding or swapping any ingredients. Even add your favorite protein options! You can always toss these skewers onto the barbeque and roast them for a couple of minutes. Make these dairy free by removing the brie or adding a delicious cube of vegan cheese. Serve these with any type of dipping sauce or spread for extra fun and deliciousness. You can prep all of the ingredients and assemble ahead of time- so easy! Keep these skewers in the fridge in an airtight container for 3 – 5 days.
