Bring 2 cups of water to a rapid boil in a medium-sized pot.
Add a dash of salt, drizzle some olive oil, and add the couscous.
Stir briefly, place the lid on top, and turn off the heat.
Set a timer for 5 minutes.
Remove the lid and fluff up with a fork. Set aside and allow to cool.
In a large bowl, combine ALL of the ingredients.
Mix to combine and adjust seasoning to taste.

Notes Personalize this salad to fit your needs! You don’t like feta or are vegan? SWAP it for your favorite substitute! Add anything else you desire! Swap the couscous for quinoa to make this gluten-free! OR use this combination with whatever else, like orzo or fusilli pasta! This salad can be kept in the fridge in an airtight container for 3 – 5 days.
