To a large soup pot add olive oil and turn to medium heat. Once warm add in chopped carrots, chopped celery, chopped onion and minced garlic. Cook for about 5 minutes until softened.
Add in salt, pepper, dried oregano and dried thyme. Stir with the vegetables and cook 2-3 more minutes.
Add in vegetable broth and diced tomatoes and bring to a simmer. Once simmering add alphabet pasta and cook according to package directions (most likely around 5 minutes).
Taste soup and adjust seasoning with more salt and pepper if needed. If you want a brothier soup, add another cup of broth.
Finish the soup by adding 2-4 tablespoons of vegan or regular cream cheese. Stir to combine and enjoy!
