Creamy – This vegetable alphabet soup recipe isn’t your average vegetable soup – I made this super creamy and packed with flavour to create the ultimate comfort food soup you will want to make time and time again.

Packed With Vegetables – Celery, carrots, onions, garlic tomatoes – and not to mention vegetable broth, simmered together in one pot to bring out all the delicious veggie flavours. This creamy vegetable alphabet soup recipe is guaranteed to be a fan favourite.

Ingredient Notes

Carrots: Carrots are rich in vitamins, minerals, and antioxidants – not to mention they are also a very gut-friendly food. They are a staple ingredient in soups and many other dishes because of how versatile and delicious they are.

Celery: Celery, oh celery. Known for consisting of mostly water, its crunchy stalks make the vegetable a popular low-calorie snack. Another staple in any vegetable soup recipe, celery provides loads of antioxidants and fibre.

How To Make My Alphabet Soup Recipe

  1. To a large soup pot add olive oil and turn to medium heat. Once warm add in chopped carrots, chopped celery, chopped onion and minced garlic. Cook for about 5 minutes until softened.
  2. Add in salt, pepper, dried oregano and dried thyme. Stir with the vegetables and cook for 2-3 more minutes.
  3. Add in vegetable broth and diced tomatoes and bring to a simmer. Once simmering add alphabet pasta and cook according to package directions (most likely around 5 minutes).
  4. Taste the soup and adjust seasoning with more salt and pepper if needed. If you want a brothier soup, add another cup of broth.
  5. Finish the soup by adding 2-4 tablespoons of vegan or regular cream cheese. Stir to combine and enjoy!

Can’t find alphabet pasta noodles? Look for another small noodle that takes only 5 minutes or so to cook. Tiny shell pasta would work great!

Don’t want a creamy soup? Simply omit the addition of cream cheese.

Ingredients
  

  • 2 tbsp olive oil
  • 2 medium carrots, chopped
  • 1 small yellow onion, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp ground pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 7 cups vegetable broth or 4 tbsp vegetable boullion per 7 cups water
  • 1 cup alphabet pasta
  • 14.5 oz can diced tomatoes
  • 2-4 tbsp vegan or regular cream cheese

  • Add in salt, pepper, dried oregano and dried thyme. Stir with the vegetables and cook 2-3 more minutes.
  • Add in vegetable broth and diced tomatoes and bring to a simmer. Once simmering add alphabet pasta and cook according to package directions (most likely around 5 minutes).
  • Taste soup and adjust seasoning with more salt and pepper if needed. If you want a brothier soup, add another cup of broth.
  • Finish the soup by adding 2-4 tablespoons of vegan or regular cream cheese. Stir to combine and enjoy!
