Mix together the smash burger sauce ingredients in a small bowl and set aside.
Make the dill pickle slaw -
Add the ingredients for the dill pickle slaw to a medium bowl and toss together well. Taste and adjust the seasoning with more salt, pepper and/or pickle juice if desired. Place in the fridge.
Make the pickle pico de gallo -
Dice / chop the red pepper, red onion, pickles and jalapeno all around the same size and add to a medium sized bowl. Add the fresh chopped dill, lime juice or pickle juice and salt and toss to combine. Let sit and before serving with the tacos, taste and adjust seasoning with more salt and/or lime or pickle juice if desired.
Make the smash beef tacos
Mix together the ground beef, diced onion, salt, pepper, garlic powder and onion powder until combined. Divide the meat mixture into 10-12 portions (depending on how many tacos you're waking) and roll each portion into a ball. Place the ball of meat in the center of each tortilla and press onto the tortilla, making sure it’s as thin as possible so it cooks quickly
Spray a cast iron or non-stick skillet with avocado oil or olive oil spray. Heat over medium heat. Once hot, place the tortilla beef side down. Flatten / smash it into the pan using a flat surface (ie. bottom of a small pot or frying pan, metal flipper).
Cook until well browned and cook through, about 3-4 minutes until browned and then flip, add about 2 tbsp of grated cheese on the beef and cook for another 1-2 minutes or until the beef is cooked through and cheese is melted (use a lid on the pan to help melt the cheese faster if desired).*Note: If you have a larger cast iron or skillet, you can cook 2-3 tacos at a time*
Remove from the pan and cook the remaining smash tacos. **Only add more oil if the beef starts to stick to the pan**
Serve topped with the dill slaw, pickle pico de gallo and a drizzle of smash burger sauce.
