1 ¼cupquartered baby tomatoes (or 2 medium tomatoes diced)
For the dressing
½cupextra-virgin olive oil
½tbspdried oregano
1 ½tspkosher salt
¼tspground pepper
juiceof one lemon
½tbspred wine vinegar
2small garlic cloves, pressed
Instructions
Make the dressing by whisking together all of the ingredients and set aside.
Add all of the salad ingredients to a bowl.
Drizzle the dressing over, toss and serve.

Notes
If you can't find black eyed peas, cannellini or navy beans would be a delicious substitutes.
