This viral Costco chicken rice bowl is fresh, flavor-packed, and comes together with minimal prep using rotisserie chicken, fluffy rice, and a bright lemony dressing. It’s perfect for meal prep and easy to enjoy as a bowl, wrap, or salad throughout the week.
1Costco rotisserie chicken in the bag,chicken removed from the bones
1cupdiced English cucumber
1heaping cup halved baby tomatoes
¼cupfresh chopped parsley
½cupdiced red onion
1cupdiced red pepper,about 1 large red pepper
½cupcrumbled feta cheese
¼cupextra-virgin olive oil
3tbsplemon juice
1large garlic clove,pressed
2tspkosher salt
½tspground pepper
Instructions
Cook the rice: Add the rice to a small pot with 1 cup of water and pinch of salt. Bring to a boil over high heat and once boiling, turn to medium-low to keep at a simmer with the lid mostly on for 10-12 minutes or until the rice is tender and no water remains. Remove from the heat and put the lid on the rice for 10 minutes. After 10 minutes, fluff the rice with a fork and set aside with the lid off to cool.
Remove the chicken from the bones and pull it into pieces. Add the chicken to the bag.
Add the sliced cucumber, sliced tomatoes, fresh chopped parsley, sliced red onion, sliced red pepper and crumbled feta cheese.
Once the rice is cooled, add it to the bag as well.
In a small bowl whisk together the olive oil, lemon juice, pressed garlic, kosher salt and ground pepper to combine.
Pour this dressing over everything in the bag and gently shake to combine. Taste and adjust seasoning with more salt and pepper if desired.
