1tbspbrine from the feta (the liquid the feta is stored in)

Instructions
Make the whipped feta by adding the feta cheese, feta brine, lemon juice, olive oil and lemon zest to a food processor and pulse until smooth and light.
Make the peaches by adding a drizzle of olive oil to a pan and turning to medium heat; add the peaches and cook for 5-8 minutes until the peaches start to break down and turn into more of a jammy texture. Remove from the pan to a bowl and set aside to cool. (Alternatively, you could saute the peaches for just 1-2 minutes and then set aside in a bowl to cool).
To make the hot honey, in a small bowl mix together the liquid honey, chili flakes and hot sauce. Taste and adjust by adding more chili flakes or hot sauce for a spicier honey.
Once the peaches have cooled, assemble the dip by layering the whipped feta on a plate or in a low bowl. Next layer the peaches followed by tomatoes, pistachios and drizzle with desired amount of hot honey. Serve with fresh or toasted pitas.

You can also serve with crackers of your choice or crostini.
