These Oven Baked Lamb Chops are full of flavor and so easy to make. Put all the ingredients onto a baking tray and in no time you'll have a delicious, wholesome meal.
Serve with tzatziki, fresh lemon slices and halved baby or cherry tomatoes (if desired)

Instructions
Prepare the lamb.
Place the chopped potatoes in a large casserole dish. Add the lemon juice, water, mustard and olive oil and toss to combine. Add in the garlic cloves.
Place the lamb chops on top of the potatoes. Sprinkle the salt, pepper, dried oregano and garlic powder over the lamb chops.
Use your hands to spread / massage the seasonings over / into the lamb chops and sort of toss a bit with the potatoes, then arrange the lamb chops back on top of the potatoes and nestle the bay leaves into the potatoes.
Cover the baking dish with a piece of parchment paper and then with a piece of foil.
Bake for one hour and then remove the parchment paper and foil. Flip the lamb chops at this one hour mark and give the potatoes a little stir.
Bake for 30 minutes to 1 hour more uncovered, until the potatoes and lamb chops are very tender.
Serve potatoes with a lamb chop or two and spoon over any sauces leftover from the baking dish.
Garnish with fresh herbs, fresh lemon slices and halved baby tomatoes (if desired) and enjoy with tzatziki.
