Hey everyone! I am so excited to share with you guys this amazing Cake!! I can honestly say this was one of my most happy baking moments yet. When that cake came out in perfect shape I was grinning from ear to ear! I have to give a lot of credit to Dana from Minimalist Baker (www.minimalistbaker.com) who originally came up with the cake recipe, but I modified it based on what I had and how I wanted it to turn out! This is why baking is so amazing, just try out ingredients, and see what works best for you!! and of course, always acknowledge the original author if you’re going to publish it on social media!
This cake is seriously the perfect combo of flavours, and textures. The yummy crunch from the nuts, creamy bananas, and spicy ginger and cinnamon really add depth to this decadent cake. Healthy never really seemed so easy, until now? Right?
I cant really help but drool while staring at this bad boy. It was just so healthy, indulgent and necessary in everyday possible. This type of cake would be a big hit at a birthday, office or weekend get together party! Leaving your guests stunned, and coming back for more, or probably the recipe! 1 cup grated apples (around 2 apples, I used organic royal gala)
1 medium ripe banana, mashed
1 1/2 cups unsweetened coconut milk
2 tbsp desiccated coconut
1/2 tsp salt
1 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp ground ginger
1 1/4 tsp ground cinnamon
1 cup spelt flour
1 cup rolled oats
handle of vegan chocolate chips
2 pretty pears
Line an 8×8 tin with parchment paper, and lighting spread coconut oil on the paper. Set aside.
Preheat oven to 350F
Add prepared chia eggs by mixing chia and water to a large bowl and let it sit for 5 minutes.
Core apples, grate, and drain using a cloth. That juice is very drinkable.
To the chia egg, add agave, molasses, oil, vanilla, coconut milk, grated apples, and whisk.
Now into a large bowl add shifted dry ingredients, 1 cup spelt flour, 1 cup oats, baking soda, baking powder, salt, ginger, cinnamon, coconut. Mix all these ingredients well, and add to wet ingredients bowl.
If the batter is too thick, add more coconut milk, and finish off with a little handful of vegan chocolate chips (regular chocolate chips are fine!
Pour the mixture into the 8×8 tin, but watch out not to pour to much (I would pour in about 90% of it) then shove those pears right in..and if there looks like there is still room to raise then add the rest!!
Bake for 40 minutes, or until that tooth pick comes out nice and clean!
Once the cake it cooled top with yummy toppings of your choice! I used walnuts, more coconut and a light drizzle of maple syrup!
