This is the perfect post gym vegan recipe that'll leave you full and satisfied! I promise. Recently I discovered Bob's Red Mill's grits and I'm kinda obsessed. It is made with coarsely ground bits of white corn, is healthy and super easy to cook. What I love about it is that it's something cool and different for consuming and enjoying carbs. I noticed grits were popular when I was in Nashville in October and I've been meaning to put together my own recipe using grits since then! Grits are super versatile, vegan, and there are so many unique ways you can use them. You can eat them on their own, make polenta cakes, polenta chips, casseroles, and I've seen people use them to make mini pancakes that act like tacos! Uhmm... yum!

If you're like me, you get sick of drinking water all the time, and it's nice to have a mix of different beverages in your life, especially ones that are healthy, vegan, and add some flavour and excitement to your diet. So I've always had a mega obsession with hummus and other easy-to-make vegan dips that are perfect for snacking. Nothing beats a great couscous salad, at least in my opinion. This recipe I put together with the help of the star ingredient, California Prunes. This dish will take you straight to Lebanon. However, this is obviously not completely traditional but I was entirely inspired by the gorgeous countries tabbouleh, and I decided to add some extra ingredients like couscous and prunes to add a unique twist to a traditional recipe.
SWEETPOTATO Curry has quickly become my households go to meal.  It is so easy to whip up, store away and take with you on the go! Filled with nutrients, carbs, healthy fats and flavour this meal will not disappoint. I am always on the go so there is really nothing better than a meal that you can take with you anywhere.  This dish is a true testament that eating healthy and smart does not have to be hard or a sacrifice of flavours.

GP Confession Friday.  Thats a thing right?  Well I hope so because I am confessing that I love Greek Style Potatoes and that they make my life a better and more happy place.  Seriously, these Greek Style Potatoes are so crispy and crunchy on the outside while staying so steamy hot and soft on the inside.  Certainly mine and Andrews favourite go-to-snack and can be made in such large quantities to please a whole family for your next feast!
