Breakfast is the most important meal of the day, you don’t need me to tell you that. However, we all lead busy lives and hardly have time to breathe most of the time, let alone make a healthy, nutritious breakfast. Often we’re left reaching for cereal that can be loaded with sugar, or a smoothie which can get boring after a while. That’s why I love this new vegan granola bowl recipe I whipped up with Bob’s Red Mill granola for a quick and easy healthy breakfast that the whole family will enjoy.

Did you know that Harvard researchers discovered that men who skipped breakfast had a 27% higher risk of a heart attack or heart disease compared to those who regularly ate breakfast?

For this breakfast recipe, I took Bob’s Red Mill pre-made granola which is one of my new kitchen staples for my vegan diet. This granola is pan-baked, is certified organic, non-GMO, and kosher. They make it with their whole-grain oats, and it’s gluten-free. I love any products that have an easy to read ingredient list, so you know exactly what you’re putting into recipes like these granola bowls, and most importantly, your body. What’s great about this granola, is that often granolas can come with a lot of sugar, but this granola only has five grams, and cost under $7! Plus, you can buy it in multiple flavours. Feel free to use whatever flavour you think sounds best for this recipe, or switch it up each morning/week as you meal prep. The flavours they offer are:

  • Lemon Blueberry
  • Cranberry Almond
  • Coconut Spice
  • Maple Sea Salt

…. seriously though, how amazing do those all sound? Plus, make for an easy, healthy breakfast like using them in this vegan granola bowl.

Mix it all up with dates & roll it out

I decided to do something a little different for this vegan granola bowl. We all know how boring granola and yogurt or fruit can get, so I put the pre-made granola into a food processor, with dates (more on those later), and chocolate chips, and rolled it into balls. Not only are these super easy, but they take only five minutes to make! BONUS!

Dates are another kitchen staple, especially as a vegan. Why? Because they have so many health benefits. First off, they are super nutritious loaded with important vitamins and minerals, in addition to a significant amount of fibre. They are also high in disease-fighting antioxidants. Antioxidants protect your cells from free radicals, which are unstable molecules that may cause harmful reactions in your body and lead to disease. Dates have the three most potent antioxidants:

  • Flavonoids
  • Carotenoids
  • Phenolic Acid

Did you know dates have almost 7 grams of fiber in just a 3.5 oz serving?

Dates also promote brain health, they are a natural sweetener, can help in bone health, and blood sugar control. What more could you ask for from this little ugly dried fruit?

This whole granola bowl is not only healthy, vegan, and easy, but it’s also a great staple breakfast for the whole family and you can adapt it to add your fav granola flavour, different in-season fruits, etc.
