Easy and creamy. This creamy cucumber salad is like deconstructed tzatziki. It's healthy, fresh, and can be made in 10-minutes.

If you know me, then you know I love tzatziki. I grew up eating it and I love to make this creamy cucumber dip myself to have on hand for dips, sandwiches, etc. This creamy cucumber salad has taken tzatziki and deconstructed it to make it a delicious, creamy cucumber salad instead. I think you’ll really love this for your next BBQ or potluck.

Ingredients:

Cucumber: Cucumber is high in nutrients but low in calories. It contains antioxidants, is hydrating, and is so easy to add to your diet through salads (like this creamy cucumber salad recipe), juices, or even just enjoy on its own.

Greek Yogurt: Greek yogurt is such a good source of nutrients and protein. It’s great for gut health, and really easy to add to recipes. I use Greek yogurt often as a healthier swap for mayonnaise.

How to make creamy cucumber salad:

  1. In a large bowl, combine the red onion, olive oil, lemon juice, dill, basil, garlic powder, onion powder, salt, and black pepper.
  2. Mix to combine and set aside.
  3. Cut off the ends of the mini cucumbers.
  4. Using the backside of a large chef knife, crush the cucumbers.
  5. Add the smashed mini cucumbers to the large bowl along with the Greek yogurt.
  6. Mix thoroughly until combined and enjoy!

  • 3 cups mini cucumbers OR 1 long English cucumber
  • 1/3 cup Greek yogurt
  • 1 small red onion thinly sliced
  • 1 tbsp. olive oil
  • ½ fresh lemon juice
  • 1/3 cup fresh dill chopped
  • ¼ cup fresh basil chopped
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. salt
  • ½ tsp. black pepper
