Mediterranean sheet pan chicken is the kind of dinner that makes everyone gather around the pan before you’ve even had a chance to plate it. Juicy chicken thighs roast alongside sweet peppers, bursting tomatoes, and blocks of feta, all swimming in a lemony pan sauce that’s practically begging to be scooped up with warm pita. Trust me, you won’t want to waste a single drop.
If you’re looking for a fresh take on sheet pan chicken and vegetables, this Mediterranean-inspired recipe delivers big flavor with very little effort. It’s colorful, comforting, and comes together in just 40 minutes. My favorite kind of weeknight meal.

Recipe Summary
Mediterranean sheet pan chicken is a 40-minute dinner made with roasted chicken thighs, peppers, tomatoes, feta, and a lemon and olive oil sauce. Smoked paprika, turmeric, chili flakes, fresh dill, and basil create layers of warm, fresh flavor, while warm pita turns every bit of the delicious pan juices into part of the meal.
Why You’ll Love Mediterranean Sheet Pan Chicken
You’ll make this one again because it’s so dang easy. Here are just some of the reasons.
Everything roasts together
One sheet pan means the chicken, vegetables, feta, and all those incredible juices cook together, creating a dinner that’s full of flavor without juggling multiple pots and pans. And honestly? The warm pita isn’t just for serving. It’s your utensil for soaking up every last bit of that lemony tomato sauce.
Big feta energy
Forget sprinkling a little crumbled cheese over the top. This recipe uses thick pieces of block feta that become soft while roasting. You’ll appreciate that this recipe lets the feta keep its shape while becoming perfectly silky inside.
Perfect for busy weeknights
Dinner doesn’t need to be complicated. With only 10 minutes of prep and about 30 minutes in the oven, you’ll have a wholesome meal on the table in just 40 minutes.
Mediterranean-inspired with its own personality
While I have plenty of Greek-inspired chicken recipes on the site, this one heads in a different direction. Smoky paprika, earthy turmeric, sweet roasted peppers, juicy tomatoes, creamy feta, and fresh herbs create an entirely different flavor profile. The generous pour of extra-virgin olive oil ties everything together, so the spices season the vegetables and every drop of pan juice.

Key Ingredients and What Makes Them Work
The beauty of this Mediterranean sheet pan chicken is that every ingredient has a purpose. The chicken stays juicy, the vegetables roast until they’re sweet and tender, the feta turns soft, and everything mingles together in a lemony sauce that you’ll want to eat up with plenty of pita.
Here’s what makes each ingredient shine.
Bone-in, Skin-on Chicken Thighs
Chicken thighs are my go-to here because they stay juicy while the skin gets nice and golden in the oven. The bones help lock in moisture, giving you tender meat every single time.
If you prefer, the recipe also works with four chicken breasts. Just keep an eye on the temperature, as breasts can finish cooking a little sooner than thighs.
Block Feta
Please grab block feta if you can (vs. pre-crumbled). It’s one of the stars of this recipe.
Instead of melting into a smooth cheese sauce, block feta softens in the oven until it’s creamy enough to spread with a fork while still holding its shape. That’s exactly why this recipe calls for four generous pieces for so much creaminess!
Extra-Virgin Olive Oil
Never underestimate good olive oil!
It isn’t just there to keep things from sticking. It carries the flavor of the lemon and spices throughout the entire pan, coating every vegetable and helping create those rich, flavorful juices you’ll be dipping your pita into later.
I always lean into good olive oil because it adds richness without making the dish feel heavy!
Warm Pita
I honestly think pita deserves its own ingredient section. Sure, you can use a fork, but warm pita lets you soak all those juices up!

What Makes This RECIPE Different
If you’ve been cooking your way through my chicken recipes, you might be wondering where this one fits in. While they all share the fresh, vibrant flavors I love, each recipe has its own personality, making it easy to choose the one that matches what you’re craving. If you’re in the mood for a heartier dinner with potatoes and beans, my Greek Chicken Thighs + Butter Bean Sheet Pan Meal is the one to make. You may have also tried my Sheet Pan Chicken and Potatoes, but this isn’t that recipe either. And while my Mediterranean Chicken with Olives and Feta combines chicken breasts with olives in a skillet, then finishes in the oven, this version keeps things simple. Everything roasts together on one sheet pan, with bone-in chicken thighs nestled among colorful vegetables and generous pieces of softened feta.
No recipe is better than another! This one is for those nights when you want bold Mediterranean-inspired flavors, minimal cleanup, and plenty of bread for soaking up that irresistible pan sauce.
Tips for the Best Sheet Pan Chicken and Vegetables
A great sheet pan meal comes down to simple technique. Here is how to get the most flavor out of this sheet pan chicken and vegetables dish:
- Give everything space on the pan: Use a large sheet pan so the peppers, tomatoes, chicken, and feta aren’t crammed together. Crowding traps steam, leaving you with a wetter tomato-pepper mixture and pale skin. Space lets the heat roast the vegetables and brown the chicken properly.
- Keep the feta in large blocks: Keep your feta in four substantial pieces rather than crumbling it. Crumbled feta dries out quickly under high heat, but thick blocks soften into warm, creamy pillows that stay scoopable beside the chicken.
- Rely on a meat thermometer: Don’t judge doneness by cooking time or skin color alone. Insert an instant-read thermometer into the thickest part of the chicken thigh without touching the bone (it’s ready when it reads 165°F).
- Watch timing if swapping proteins: If you choose to use chicken breasts instead of thighs, keep a close eye on the oven timer. Breasts cook faster and will dry out if left in for the full 30 minutes.
- Finish with fresh herbs at the end: Scatter the fresh dill and basil over the pan immediately after it leaves the oven. The gentle residual heat releases their aromatic oils instantly, cutting through the rich, smoky pan juices.
Serving Ideas
This meal is designed around the pan sauce, so serving it with bread is essential!
- Scoop it up with pita: Serve this pan hot out of the oven with warm, fluffy Greek pita bread to catch every drop of the lemony olive oil sauce and softened feta.
- Build a meze spread: Add a bowl of smoky muhammara to the table for dipping alongside your pita and roasted vegetables.
- Add a crisp side: Pair the warm, rich sheet-pan chicken with a cold, bright Greek chickpea salad to add extra crunch and fresh acidity to the meal.
Variations and Substitutions
- Swap for chicken breasts: You can substitute four bone-in or boneless chicken breasts in place of the eight chicken thighs. Because breasts are leaner, check for an internal temperature of 165°F early to keep them juicy. Unlike a heavy, creamy baked feta chicken skillet dish, this sheet-pan method keeps things light by roasting the chicken alongside peppers and fresh tomato wedges in a spiced lemon oil.
- Switch up the tomatoes: Use whatever ripe tomatoes look best at the market for that final cup. Sweet plum tomatoes cut into wedges or halved Campari tomatoes work wonderfully alongside the heirloom wedges and cherry tomatoes.
- Adjust the heat: If you prefer a milder flavor profile, reduce or leave out the 1/4 teaspoon of chili flakes. The smoked paprika, turmeric, lemon zest, and fresh herbs provide plenty of warmth and complexity on their own.
Storage and Reheating
- Refrigeration: Transfer leftover chicken, feta, and vegetables into an airtight container within two hours of cooking. Store in the refrigerator for up to 3 to 4 days.
- Reheating: Reheat leftovers in a 350°F oven or in a skillet over medium heat until the chicken reaches an internal temperature of 165°F. Keep in mind that the roasted peppers, tomatoes, and feta will naturally soften further after being stored and reheated.
- Fresh finish: If you plan on having leftovers, reserve extra fresh dill and basil to sprinkle over the warmed plate right before eating rather than storing the herbs on top.
Frequently Asked Questions
This recipe uses four thick pieces of block feta because they soften in the oven while staying creamy and scoopable beside the chicken and vegetables. Crumbled feta would dry out and would not create the same substantial feta-and-pan-sauce texture.
Yes. Reduce or leave out the 1/4 teaspoon of chili flakes. The lemon, smoked paprika, turmeric, tomatoes, feta, dill, and basil still give the dish plenty of flavor without the extra heat.
Serve it with pita so you can scoop up the softened feta and lemony tomato-pepper pan sauce. A fresh chickpea salad or a roasted-pepper dip also works well if you are setting out a larger spread.

Notes
- We love to use bone-in skin-on chicken thighs for this recipe, but you can substitute with 4 chicken breasts if desired (they may require slightly less cooking time).
