Three Simple Salads that are perfect for busy people who still want to eat great, healthy food! There is nothing better than a salad that take minutes to make, and requires 5 ingredients!  All of these salads are gluten, and dairy free. The salads have a long “fridge life” so they can be made at the beginning of the week, and be eaten throughout your busy work-days I  (promise you, these salads are a lifesaver)!

What also makes these Simple Salads simple is the fact that the ingredients used in the recipes are accessible, and affordable!

Salads with Less Than Five Ingredients

Ingredients

  • Bean Salad:
  • 1 can of Cannellini Beans
  • Juice from one lemon
  • 3 tbsp EVOO
  • 4 tbsp hot sauce (I use franks)
  • Fresh thyme (as much as you like!)
  • Quinoa Salad:
  • 1 cup fresh tomatoes, diced
  • 3 cups cooked quinoa
  • Sauce:
  • 3 tbsp nutritional yeast
  • Juice from one lemon
  • 2 tbsp EVOO
  • Zucchini Salad:
  • 2 zucchini’s, spiralized
  • 1 cup of cucumber (cut into match sticks, I cut mine like I did for photo purposes)
  • 1/2 cup of fresh basil
  • 3 tbsp EVOO
  • Juice from one lemon
  • Each salad gets a generous seasoning with salt+pepper!

Instructions

  1. Salad 1: Into a medium bowl combine all the ingredients, and stir very gently to avoid breaking the beans!
  2. Salad 2: Prepare you quinoa and let it cool.
  3. Prepare your tomatoes by cutting them, set aside.
  4. Into a large bowl add your sauce ingredients, and stir well till combined.
  5. Now add your quinoa, and tomatoes to the mix and using a large fork to stir and marry the salad.
  6. Salad 3: Prepare your veg by spiralizing the zucchini, cutting the cucumbers, and choosing your basil.
  7. Once you have that done, just simply add your veg, and two other ingredients into a mixing bowl and stir it up nice with your hands!
  8. Note: you can set your salads aside for a few minutes before serving, this helps the flavours get all yummy!
  9. DO NOT FORGET TO SEASON WITH SALT AND PEPPER
