Did someone say Easy Quinoa Salad?  Made with dill, fresh salsa, and asparagus..only the best flavour combinations, and made in 30 minutes!? Someone pinch me, is this actually real life?

This dish takes as long as whipping up fluffy quinoa, crunchy asparagus, and citrusy salsa.  Everyday cooking tasks ain’t it?

As you all know I believe cooking good-for-you food really does not have to be difficult, and I promise you it will still taste great if it doesn’t require two hours in the kitchen.  This is where fresh and beautiful ingredients come in handy.  If you are using ingredients that are filled with natural flavour, then you really do not need to work extra hard to make them taste amazing because they already do!

Healthy + Easy Quinoa + Asparagus Salad

Ingredients

Scale
  • Quinoa:
  • 3 cups of cooked quinoa then married in some EVOO and dusted with salt and pepper
  • 1/2 cup of Dill, fresh, finely chopped
  • Asparagus:
  • 1 bunch of asparagus, grilled for around 3 minutes on each side with EVOO, salt and pepper
  • Zest of 1 lemon
  • Mango Salsa
  • 1/2 a mango, cubed
  • 2 tomatoes, cubed
  • 1/2 cup cilantro
  • 1 glove of garlic
  • Juice of 1 lime
  • Salt + Pepper
  • 2 tbsp EVOO
  • Garnish
  • Lime
  • More Dill

Instructions

  1. Grab a large plate, and set aside!
  2. Prepare your quinoa, and asparagus by cooking your quinoa, and grilling your asparagus as instructed above. Make sure to pinch off the end bits of the Asparagus to avoid getting the chewy ends.
  3. Zest your lemon.
  4. Once your Quinoa has cooked, and cooled add Salt, Pepper, and EVOO. Toss is about well with a fork and set aside.
  5. Now you can prepare your Salsa by adding all the ingredients into a medium mixing bowl, and stirring with a spoon for a few seconds to combine the flavours. You can let the salsa sit for a few minutes so that the flavours can marry.
  6. Now you can begin assembling your plate. Here is the order in which I did mine!
  7. Quinoa, Dill, Asparagus, Lemon Zest, then randomly placing the salsa. Finishing with some Lime, and more Lemon Zest + Dill!
  8. That is it.
  9. Eat immediately or store in air tight container up to a couple days!

Who me? Did I say “I really LOVE QUINOA???” Well I wouldn’t be surprised if I did because it’s true! 😀 This salad looks so abundantly fresh with amazing veggies and colors popping up everywhere!
